Happy soon-to-be Easter. Easter is coming up and I decided to bake, even though I am not the best baker you will find. Surprisingly, my cupcakes turned out pretty well. I used the Golden Cloud cake mix- I am not promoting anything or getting paid. These cupcakes were super easy to make and are ooohh soooo delicious to eat.
I decided to use a mix because this post is for people who are not very experienced when it comes to sponge cake or icing, and I am definitely describing myself.
I will list all the instructions, as well as pictures to inspire your love for good food. This is my very first foody post on my new blog, bearing in mind, I never posted about food on my old blog either. This is very new to me, but I found it really fun and I will continue to make more food posts, and share it with all of you.
Make the cupcakes
Step 1: Gather all your ingredients
The first step is to make sure you have all the ingredients needed and that you have all the supplies you need such as bowls, whisks etc. Here is the list of ingredients needed for the cupcakes: 1 packet of Golden Cloud Cake mix(I used the vanilla flavoured cake mix, but you can choose any flavour) 150 ml of sunflower oil(I just used melted butter) 250 ml of full cream milk 2 Large Eggs
Step 2 : Preheat your oven to 180 degrees Celsius
This step is quite simple. Remember to preheat your oven before you start baking, so that your food cooks thoroughly and does not take longer to cook than the specified time because your food might burn if you are not an experienced baker.
Step 3: Empty your premix into a bowl
Empty your premix into a normal bowl or mixing bowl.
Step 4: Mix all the liquid or wet ingredients together
iix the eggs, milk and sunflower oil together in a bowl. If you use sunflower oil, you can mix everything together with a spoon. If you use butter(just like me), you need to melt the butter first and then mix it with the milk and eggs. The butter starts to starts to solidify again, due to the milk and eggs. For this reason, you should beat everything together with a whisk in order to mix everything together thoroughly, only if you use butter or margarine.
Step 5: Add the mixed oil, eggs and milk solution to the premix
Add the mixed milk, oil(or butter) and eggs solution to the premix. What you see in the picture is all the butter starting to solidify. Don't worry about this, when you mix everything together it turns out fine. I also transferred my premix into a bigger bowl, so that it would be easier to mix with the wet ingredients.
Step 6: Mix the premix and other ingredients together
Now mix the premix with all the other ingredients(eggs, milk and oil) by using a spatula or a spoon. Then use an electric beater for 2 minutes(on high speed). Remember to scrape off the sides of the bowl during mixing in order to make sure all of the premix is mixed into the solution. You should do this until the batter is light and fluffy.
Step 7: Line a muffin/cupcake pan with paper cups
Line a muffin/cupcake pan with paper cups. You can use plain or patterned paper cups. If you do not have paper cups, you can cover the area with butter or margarine and then lightly flour over the butter or margarine. It is more likely to burn if you don't use paper cups, but if you really want to make cupcakes then butter and flour could be a suggestion.
Step 8: Fill the cups and place in the oven to bake
Fill each cup 3/4 full (approximately 1 1/2 tablespoons) and bake for 15 minutes or until a skewer comes out clean when inserted through the centre. Once the 15 minutes are up, take out your cupcakes and allow them to cool for at least 10-20 minutes.
Make your Icing Step 1: Beat your butter
Unfortunately, I did not take a picture of all the ingredients you need, o make the icing because I forgot, but I am going to tell you what you need to make the icing: 1 packet of Golden Cloud cake icing mix 100g softened butter or margarine 30ml (2 tablespoons) full cream milk The first thing you need to do is beat your butter until it is smooth and creamy. You can use a whisk to do this ( I used a wooden spoon)
Step 2: Add the icing mix
Add the icing mix gradually until the icing mix is finished. Make sure the icing is lump-free and smooth
Step 3: Get creative
If you want to, you can get creative for Easter and add food colouring (I added green food colouring). Add an amount relative to how intense you want that colour to be.
Step 4: Prepare your piping bag
I didn't have a piping bag available, and so I used a zip lock bag, but you can also use a normal sandwich bag. Remember to cut the tip of the bag relative to how thick you want your swirls to be. Then transfer your icing into the bag and place in it the freezer to allow it to chill for about 5-10 minutes.
Step 5: Time to pipe
Now you can pipe and be as creative as you want. The theme of these cupcakes was Easter and so I added speckled eggs, to make it look like they were Easter eggs on grass(green icing).
